Many months of work have gone into the transformation of The Cow at Dalbury Lees – not least by Rob Cole, a joiner and cabinet maker, whose work throughout the entire premises has become one of the best examples of the group’s decision turn this into a bespoke property. And every effort has been made to ensure that all original features have been retained and revealed by a local team of dedicated professionals.
Each room has also been individually designed, themed and decorated during the refurbishment, and the main public area will be the bar and restaurant, where guests will be able to mix with diners and locals, while enjoying meals from a menu created by executive chef, Gareth Ward, in tandem with head chef at The Cow, Ben Peverill.
Management at The Cow at Dalbury Lees are aiming to create a home-from-home ambience, where guests can escape to the country to enjoy some understated opulence.
The Cow is the first boutique hotel to be unveiled by the newly formed Cow Hotels Ltd. It is operated by the same team that have brought The Horseshoes at Long Lane and Cock Inn at Mugginton back to life over the last couple of years. Their Cow Cab, meanwhile, will offer transport between the properties – especially the nearby fine-dining Horseshoes at Long Lane.
The Cow, however, is also close to Derby’s regenerated city centre, which is now filled with a growing array of places to eat and drink, museums, galleries and one of the largest shopping malls in the country.
